Lockwood Hosts a Macallan Tasting

Lockwood Restaurant & Bar, located in The Palmer House, A Hilton Hotel, 17 E. Monroe Street, hosts the next installment of its Uncasked & Paired Series, 6 p.m. April 28; $75. The evening starts with a cocktail reception featuring drinks made from The Macallan 12 Years Old Traditional, exclusively aged for a minimum of 12 years in the rare sherry-seasoned Spanish oak casks of Jerez, Spain.

Chef Mat Wiltzius builds a three-course dinner around scotches from The Macallan label. Jillian L. Farrell, brand ambassador for The Edrington Group (Macallan parent group) will be on hand to discuss the selections. Reservations can be made by calling 312.917.3404 or  lockwoodrestaurant.com

The Macallan Tasting Menu Includes:
First Course
The Macallan 15 Year Fine Oak: a prime example of The Macallan Tradition, demonstrating an intricate array of notes, highlighted by chocolate and cinnamon. Menu pairing: sea bass wilted dandelion, buttered vanilla, saffron emulsion, new potato and leek

Second Course
The Macallan Rare Cask: created as an ode to beautiful natural color and complexity of flavor that The Macallan is known for, Rare Cask is crafted using liquid aged in first-fill Spanish sherry-seasoned oak casks. Menu pairing: herb and hard spice smoked sirloin, bĂ©arnaise marshmallow, charred spring onion, raisin crumble and sauce soubise

Third Course
The Macallan 10 Year Fine Oak: a great introduction to the Fine Oak range and an excellent expression whether you are new to the malt or you are a seasoned aficionado. Menu pairing: honey pain perdu (vanilla roasted pineapple, coca magnolia shrubbery and preserved orange)
