RPM Italian's, 66 W. Kinzie, Second Annual Winter Beef Series, a three-part educational class and dining experience, kicks off 7 p.m. January 22 with a prime dry-aged (pictured) session; $150.
Participants will learn how to prepare, along with tasting their way through, five courses. Other classes in the series are: Japanese Wagyu (6:30 p.m. February 14; $2.25) and Signature Cuts (7 p.m. March 12; $125). All classes feature wine pairings. Tickets.
