Chocolate Sanctuary serves up a seafood entree for its February Chef's Dinner


The Chocolate Sanctuary, 5101 Washington St., Gurnee, features a seafood entree for its February Chef's Dinner, 6-8 p.m. February 26.

The four-course dinner with wine pairing begins with ahi tuna poke (marinated in ginger and sesame oil with macadamia nuts, scallions, sesame seeds and avocado served with house-made wonton chips paired with Jam Cellar Chardonnay. The second course is a scallop on bed of arugula and Swiss chard with warm Dijon lemon butter sauce garnished with lemon wheels paired with Butter Chardonnay. A course featuring grilled swordfish with wild rice and mushroom pilaf, avocado mango relish and grilled tomato coulis paired with Brassfield Sauvignon Bland. The dessert course is chocolate passion verrine featuring Valrhona Itakuja dark chocolate pots de creme; mango glee; fruit caviar; raspberry jam; Valrhona white chocolate cremeux and Valrhona crispy pearls paired with Trentadue Merlot-based Port-style chocolate dessert wine.
