Columbus Tap, located inside the Fairmont Chicago, Millennium Park at 200 N. Columbus Drive, is now serving Saturday and Sunday brunch 11:30 a.m. to 3 p.m. For the occasion Chef Atticus Garant is creating a lineup of specialty dishes that includes: The Orchard (ultra-fluffy pancakes topped with bourbon preserved peaches, and cinnamon roasted apples and pears); Eggs & Bacon (scrambled egg with maple pork belly, smashed fingerlings and blistered tomatoes); Grilled Madame (grilled cheese sandwich with sunny-up eggs, field greens and tomato jam) and smoked salmon & avocado toast, served with soft boiled egg, PQB sourdough, whipped ricotta and fresh herbs.

The brunch morning after program includes: the Rim (Old Bay, celery salt or kosher salt & cracked black pepper); The Spirit (Tito’s vodka, Letherbee gin, and Basil Hayden bourbon or Cabeza tequila);  The Base (house bloody Mary mix, Clamato or V-8, and The Garnish (candied bacon, spicy dill pickle and smoked olives). Cashing on on its rich beer history the tap room is offering the Krankshaft Kölsch as the official brunch beer.
