Executive Chef Grace Goudie of Scratchboard Kitchen, 5 W. Campbell St., Arlington Heights, comes into your home for a virtual Valentine's Day couples cooking class, 7 p.m. February 13; $110, which includes a complete cooking kit for a five-course surf and turf dinner.
Goudie's menu is: NY Striploin with caramelized shallot butter: seared scallops with blood orange, fennel and pistachio; caramelized broccolini with chimichurri and black truffle risotto. Dessert, equally decadent is a Black Forest pavlova (chocolate meringue) with cherry curd and whipped cream.
During the event Chef Goudie demonstrates how to season, sear and cook the steak; how to make a caramelized shallot compound butter, how to sear scallops, how to segment blood oranges and make a blood orange sauce, how to blanch and caramelize broccolini, how to make chimichurri, how to make risotto and how to plate her decadent dessert.
Cocktail pairing drinks, for an additional cost $25, include: “Beeting Heart” old fashioned with whiskey, honey, orange, rosemary, beet juice, and orange bitters, and the “Beeting Heart" martini with apple vodka, lemon, lime, beet juice and cointreau. Additional drink specials include two splits of Chandon Sparkling wine for $20 and a $75 package featuring Regiis Ova Royal Caviar with house-made potato chips and two free splits of Chandon sparkling wine.
