Maple is featuring a weekend special (August 19-21) of squid ink spaghetti with baccala (homemade spaghetti with squid ink tossed with a ragout of cubed baccala (salt cod) loin, seared with clarified butter and white wine); sautéed vegetables; fresh porcini, tinctured with cloves, nutmeg, lemon zest and pinenuts).
