Le Bouchon kicks off 25th anniversary with dinner honoring late founder

Le Bouchon, 1958 N. Damen, celebrates its 25th anniversary with a special dinner created by Executive Chef Oliver Poilevey (left), the son of founder Jean-Claude Poilevey (right), who died in 2016. 

In his father's honor Chef Polievey has created a dinner featuring his father's favorite dishes. The menu ($38) offers a choice of appetizer: Quenelle de Brochet (pike dumpling) with lobster bisque; vichyssoise chaud-froid (chilled potato leek soup with warm fingerling chips and truffle or warm goat cheese salad with frisée, tomato and basil).

Entrees are: rabbit ragout chausseur with faralle, pearl onion and button mushroom; skate wing almondine with green beans, satsuma caper brown butter or  Parisienne gnocchi with English peas, ramps and pistachio. 

Dessert choices are Paris brest or Assiette de fromage. The menu is available through June 30.
